Whole Fish On The Braai

Braai Season is back! Why not seize this opportunity to add seafood to your braai table.
When selecting fish for a fish braai, all fresh line fish are good options. Yellowtail and Cape salmon are popular choices.
If you do not have a hinged fish grid, heavy duty foil can be used. It is advisable to rather use a hinged grid as this will prevent the fish from sticking.
What You'll Need
1 Wholefish (cleaned, gutted, scaled and remove fins)
Basting
250ml Olive Oil
100ml Lemon Juice
1 tablespoon Oreganum
1 tablespoon Fish Spice
Salt and pepper to taste
How To Make It
Step1:
Lie whole fish on its side; lightly score ±3 lines across the fish.(These lines are scored to ensure that the basting penetrates)
Step2:
Whisk all the ingredients for the basting together
Step3:
Baste the fish
Step4:
Lightly brush the hinged fish grid with oil, to prevent the fish from sticking
Step5:
Place fish on the grid and put on the braai
KEEP BASTING FISH WHEN IT IS ON THE BRAAI TO RETAIN MOISTURE AND FLAVOUR
Take off the braai, and serve with baked or baby boiled potatoes, and salad
Cooking time- depending on the size of the fish, a small fish will take approximately 30minutes, and a larger fish will take approximately 45minutes.
Another fish braai option is to slice fresh tomato and onion, and layer it over the fish. Wrap the fish in heavy duty foil (shiny side in) and place gently on the braai.
