Welcome to our kitchen, where we will share some of our favourite skills, techniques, tips and recipes that will whet the appetite of any seafood lover.

As with all things, the best point of departure is at the beginning, and when it comes to seafood that would mean how to select a great fish to adorn your dish.

Here are a couple of pointers that can help you out when selecting your fresh fish.

It should always have a pleasant ocean aroma, scales should all be intact and not be stuck to the flesh of the fish, and the flesh should be firm and moist. The colour should be shiny and bright and there should be no brownish / green discolouration and the eyes should not be sunken or cloudy but be bright. Following these basic steps will ensure that the fish you select to use in any of our great recipes will be first class.

Yellowtail and Cape salmon are popular choices.<br />If you do not have a hinged fish grid, heavy duty foil can be used.&nbsp;It is advisable to rather use a hinged grid as this will prevent the fish from sticking.<br />&nbsp;<br />&nbsp;<br />&nbsp;<br />&nbsp;
